Low Hygroscopicity & High Moisturizing General Hydrogenated Starch Hydrolysis Polyol Sweetening Substrate
Maltitol is a natural dihydric polyol (sugar alcohol). It is produced by hydrogenation reduction of maltose and occurs naturally in trace amounts in certain fermented foods. Commercially, it is mainly manufactured from corn starch and cassava starch through liquefaction, saccharification, hydrogenation and refining purification, serving as a legally compliant food additive in China.
CNS Number: 19.005
INS Number: 965
CAS No.: 585-88-6
It complies with the national standard GB 28307-2012. In accordance with GB 2760-2024, it can be used in appropriate dosages in all food categories as required by production. It features five core advantages: sweetness close to sucrose, extremely low glycemic response, powerful moisture retention, outstanding thermal stability and superior processing compatibility.
Main Component: High-purity maltitol monomer (4-O-α-D-glucopyranosyl-D-sorbitol)
Core Index: Food-grade purity on dry basis ≥98.0% (the solid content of liquid maltitol can be adjusted on demand; the purity of solid granules/powder is customizable)
Appearance: White crystalline powder/granules or colorless transparent viscous liquid, odorless without visible impurities. It delivers mild and mellow sweetness at approximately 90% of the sweetness of sucrose, with no obvious cooling sensation upon dissolution and a long-lasting gentle sweet taste.
Stability: Resistant to high temperature, acid and alkali. It performs excellently under high-temperature baking and boiling at 200°C, with low tendency of browning and decomposition under heat. Its hygroscopicity is far lower than sorbitol. The shelf life of solid maltitol is 24 months when sealed and stored in cool, dry and shaded conditions.
Solubility: Freely soluble in hot water and soluble in cold water, forming clear and transparent aqueous solutions with moderate viscosity. It shows excellent synergistic compatibility with starch, fats, milk proteins, various colloids and emulsifiers.
➢ Regulatory Compliance: Accredited by global authoritative safety certifications including FDA GRAS, JECFA, EFSA and EU food additive approvals. Unlimited addition in all food categories in China with simple and compliant label declaration.
➢ Processing Performance: Around 90% sweetness relative to sucrose, requiring only minor formula adjustments for substitution. It resists color caramelization during high-temperature baking, delivers remarkable anti-crystallization and anti-sugar recrystallization effects, and maintains highly stable physical and chemical indicators across batches.
➢ Health Benefits: Low calorie and low GI value with minimal insulin dependence, avoiding sharp spikes in blood glucose. Suitable for diabetics and population on blood sugar control and fat loss programs. Hardly fermented by oral pathogenic bacteria to produce acid, providing basic dental caries prevention effects.
➢ Formulation Compatibility: Freely blendable with erythritol, allulose, xylitol, sucralose and other sweeteners to neutralize the aftertaste of high-intensity sweeteners and solve crystallization issues in polyol systems. Fully compatible with formula systems for baking, confectionery, sauces and frozen products.
➢ Practicality: Its flavor profile most closely mimics cane sugar without unpleasant artificial sweetener off-notes. It ranks top among all sugar alcohols in moisturizing capacity and is the preferred sucrose-replacing polyol for baking, chocolate and sugar-free pastry applications.
It reaches 90% sweetness of white granulated sugar with mild, natural and sustained sweetness, free of icy irritation, bitter aftertaste or metallic off-flavors. Only slight formula modification is needed to upgrade sugary products to sugar-free or low-sugar versions, perfectly matching traditional production processes.
It contains about 50% of the calories of sucrose with an extremely low GI value. Its metabolism relies barely on insulin, leading to gentle blood glucose fluctuations and no sugar accumulation after long-term consumption. Ideal for people with abnormal blood glucose and those pursuing weight management.
Boasting top-tier moisturizing property among sugar alcohols, it effectively locks free water inside food matrices, inhibits starch retrogradation and staling, prevents hardening and drying of bread, cakes and pastries, preserves their original soft, crispy and chewy texture for a prolonged period and greatly extends shelf life.
It withstands rigorous processing conditions including 200°C high-temperature baking, sugar boiling, frying and UHT ultra-high temperature sterilization. It rarely causes excessive Maillard browning under heat, enables controllable product color, avoids crystal precipitation and sugar separation, and adapts to all high-temperature deep-processing scenarios.
Harmful oral microorganisms such as Streptococcus mutans cannot ferment maltitol to generate organic acids, reducing dental plaque adhesion and enamel erosion and lowering the risk of dental caries. Widely applied in sugar-free candies, chewing gums and oral care products.
With moderate aqueous solution viscosity, it enhances anti-bloom performance of chocolate, gelling moldability of gummies and spreadability of sauces, improves product shaping ability, chewing texture and appearance, and cuts production reject rates.
As the most widely used hydrogenated starch-derived polyol in baking and confectionery industries, maltitol features high edible safety and multiple prominent
physiological benefits:
Owing to its unique digestive and absorption pathway, it is slowly absorbed in the small intestine and imposes mild stimulation on postprandial blood glucose and insulin secretion. As a safe sucrose substitute, it satisfies the demand for sweet taste among blood sugar management groups.
It blocks the generation of acidic metabolites in the oral cavity, reduces tartar and plaque accumulation, maintains oral acid-base balance, and helps lower the incidence of dental caries and gingival inflammation with long-term intake.
Compared with mannitol and sorbitol, it triggers slighter osmotic stimulation to the intestinal tract at the same dosage. It rarely causes bloating, flatulence or diarrhea under regular consumption, enjoying high acceptance among the general public.
It can be compounded with water-soluble dietary fibers such as inulin, polydextrose and resistant dextrin to ameliorate the coarse mouthfeel of fibers and assist in stabilizing the intestinal microflora balance.
