Low-Glycemic Moisturizing Polyol Sweetening Base Material
Lactitol is a naturally-derived disaccharide-based polyol sweet substance manufactured by catalytic hydrogenation of lactose, and occurs in small quantities in fermented dairy systems. It is a permitted food additive in China. CNS No. 19.015; INS No. 966; CAS: 585-86-4. Complies with national standard GB 28307-2012. In accordance with GB 2760-2024, it shall be used in appropriate amounts according to production requirements in all categories of food. It features four core attributes: low glycemic response, mild gastrointestinal tolerance, excellent moisture-retention capacity, and soft sucrose-like sweetness.
Main Components: High-purity lactitol monomer (4-β-D-galacto-D-sorbitol)
Core Specifications: Food-grade purity (dry basis) 98.0%~102.0% (customizable upon request)
Appearance: White crystalline powder / granules, odour-free and free of visible impurities. Soft and mellow sweetness at approximately 30-40 % of sucrose sweetness; no cooling after-sensation; steady and long-lasting sweet profile.
Stability: Resistant to high-low temperature and pH variation. Structure remains stable under processing conditions below 200 °C; low tendency for Maillard browning. Slightly hygroscopic. Shelf life: 24 months when hermetically stored in cool, dry and dark conditions.
Solubility: Freely soluble in hot and cold pure water; no significant endothermic effect upon dissolution. Aqueous solution is clear and transparent. Exhibits excellent compatibility with proteins, lipids, colloids, organic acids and high-potency sweeteners.
➢Regulatory: Passed global authoritative safety evaluations including FDA GRAS, JECFA, EFSA and South Korea MFDS. Unlimited addition is allowed for most food categories in China, offering ample compliant labelling options.
➢Processing: Very low Maillard-reaction activity, resisting browning during high-temperature processing. Outstanding moisturizing effect inhibits starch retrogradation. Minor batch-to-batch fluctuations in purity and sweetness for high process controllability.
➢Health: Low-calorie with extremely low GI value and weak insulin dependence. Does not trigger sharp blood-glucose spikes. Better gastrointestinal tolerance than most polyols, suitable for glycemic-control populations.
➢Formulation Compatibility: Freely combinable with erythritol, xylitol, allulose, steviol glycosides and mogrosides to compensate sweetness deficiency and balance taste profiles, suitable for full-range sugar-free / low-sugar formulations.
➢Practicality: Gentle sweetness without peculiar off-flavours of alternative sweeteners. Remarkable moisture-retaining and anti-staling performance. A classic functional polyol raw material widely used in bakery, confectionery and dairy sectors.
Sweetness reaches 30-40 % of sucrose, delivering steady, mild sweetness without bitter after-taste or sharp cooling sensation. Blending with high-potency sweeteners or other polyols can boost sweetness without substantial formula revision, enabling easy low-sugar / sugar-free product transformation.
Far fewer calories than sucrose and an extremely low GI value. Slow human-body absorption with barely insulin-dependent metabolism, resulting in modest post-prandial blood-glucose fluctuation. Ideal for diabetics, glucose-sensitive individuals and weight-loss populations.
Its molecular structure discourages Maillard reactions, resisting discoloration under high-temperature boiling, baking and sterilization. Preserves original product colour and is highly favourable for light-coloured bakery goods, white confectionery and dairy products.
Excellent water-binding capability effectively locks internal food moisture, inhibits starch retrogradation, delays hardening and moisture-loss brittleness, extends retention of soft mouthfeel and improves shelf-life performance of end-products.
Low absorption rate in the small intestine; most fraction reaches the large intestine and acts as a prebiotic substrate to selectively stimulate beneficial gut microbiota proliferation and regulate intestinal microecology. It features a higher diarrhoea threshold than sorbitol and mannitol at equivalent dosage levels.
Oral pathogenic bacteria such as Streptococcus mutans cannot metabolize lactitol to produce organic acids. It reduces dental-plaque formation and lowers enamel-erosion risk, delivering auxiliary anti-caries effects.
Lactitol is a well-established disaccharide-based polyol combining food-safety credentials with multiple positive intestinal-metabolism benefits:
Slow small-intestinal absorption imposes mild stimulation on blood glucose and insulin, avoiding sharp postprandial glycaemic surges and providing safe, gentle sweet-taste solutions for hyperglycaemic populations.
Most lactitol reaches the colon to selectively boost proliferation of beneficial probiotics, modulate gut microbiota composition and support intestinal health.
Compared with sorbitol and mannitol, it causes lower incidence of bloating and diarrhoea at equal dosage, exhibiting good tolerance for general-population daily consumption.
Delivers low available calories. Replacing sucrose directly cuts total product energy and assists weight management.
➢Dairy Products
Yoghurt & fermented milk: Partially replaces sucrose without disturbing lactic-acid-bacteria fermentation; preserves texture via moisturization and reduces product calorie.
Milk-based beverages & plant-protein drinks: Gentle sweetness free of cloying notes with stable system behaviour, suited for low-sugar and sugar-free dairy formulations.
Ice-cream & frozen desserts: Refines ice-crystal structure, enhances melt-resistance and maintains smooth frozen-product mouthfeel.
➢Baked Foods
Bread, cakes & toast: Powerful water-locking and moisturizing performance inhibits starch retrogradation, sustains long-term soft-moist texture and resists colour development during high-temperature baking.
Biscuits, shortbread & pastries: Reduces finished-product calorie and modulates texture hardness-softness; outstanding advantages for light-coloured bakery items.
Meal-replacement baked goods & energy bars: Matches healthy low-sugar positioning and exhibits stable compatibility with dietary fibres and whey protein.
➢Beverages
Sugar-free tea drinks, sparkling water & bottled functional beverages: Gentle base sweetness with pH tolerance and minimal colour shift during storage.
Coffee, meal-replacement shakes, oral liquids & solid instant powders: Fast dissolution yielding clear solutions; no antagonistic reactions with vitamins and active functional ingredients.
