Low-Hygroscopic Crystalline Polyol Sweetening Base Material
Mannitol is a natural 6-carbon polyol (sugar alcohol). It occurs naturally in small quantities in seaweed, edible fungi, fruits and vegetables. Industrially, it is mainly refined from glucose via isomerization-catalytic hydrogenation process. It is a food additive permitted for use in China. CNS No. 19.017, INS No. 421, CAS: 69-65-8. Complies with national standard GB 28307-2012. In accordance with GB 2760-2024, it shall be used in appropriate amounts according to production requirements in all kinds of foods. It features four core attributes: extremely low hygroscopicity, excellent crystallizing performance, refreshing sweetness and resistance to Maillard browning.
Main Components: High-purity mannitol monomer (hexanehexol)
Core Specifications: Food-grade purity on dry basis 98.0%~101.0% (granule and fine-powder grades customizable upon request)
Appearance: White crystalline powder / granules, odour-free and free of visible impurities. Refreshing and elegant sweetness at approximately 40-50 % of sucrose sweetness; obvious cooling sensation due to endothermic dissolution; clean sweet profile without lingering after-taste.
Stability: Resistant to high-low temperature and pH variation. Structure remains stable under processing conditions below 200 °C; barely undergoes Maillard browning; extremely low hygroscopicity. Shelf-life: 24 months when hermetically stored in cool, dry and dark conditions.
Solubility: Soluble in hot and cold pure water with remarkable endothermic effect upon dissolution. Aqueous solution is clear and transparent. Exhibits excellent compatibility with proteins, lipids, colloids, organic acids and high-potency sweeteners.
➢Regulatory: Passed global authoritative safety assessments including FDA GRAS, JECFA, EFSA and South Korea MFDS. Unlimited addition is allowed for most food categories in China with flexible compliant labelling options.
➢Processing: Extremely low hygroscopicity with outstanding anti-caking and anti-sanding performance; strong crystallizing and forming capacity, resistant to discoloration under high-temperature processing; stable batch-to-batch indexes, especially suitable for powder and tablet-form product manufacturing.
➢Health: Lower calories than sucrose, extremely low GI value and weak insulin dependence. Note: It generates relatively strong intestinal osmotic effect at equal dosage; formula addition level shall be reasonably controlled.
➢Formulation Compatibility: Freely combinable with erythritol, xylitol, lactitol, sorbitol, allulose, steviol glycosides and mogrosides to adjust hygroscopicity and sweetness profiles, suitable for full-range sugar-free and low-sugar formulations.
➢Practicality: Low-hygroscopic property is its core advantage distinguishing it from other sugar alcohols. Multi-functional with sweetness, anti-tackiness, anti-crystallization and anti-browning properties. It is an important functional sugar-alcohol raw material for tablet candies, solid beverages and pharmaceutical preparations.
Sweetness reaches 40-50 % of sucrose, delivering clean, refreshing sweetness without heavy cloying notes and distinct cooling sensation upon dissolution. Blending with high-potency sweeteners or other sugar alcohols can boost sweetness without substantial formula revision, enabling low-sugar / sugar-free product upgrading.
Significantly lower calories than sucrose, extremely low GI value. Slow human-body absorption with weak insulin-dependent metabolism leads to slight post-prandial blood-glucose fluctuation. Suitable for glycemic-control populations under reasonably controlled formula dosage.
Its molecular structure delivers very weak moisture-absorbing capacity. It hardly absorbs moisture and becomes sticky under variable ambient humidity, effectively preventing powder caking and candy sanding-adhesion and greatly improving storage stability of solid-state products.
Hardly participates in Maillard reactions. Resists colour development and discoloration during high-temperature boiling, baking and sterilization, and maintains long-term bright-white appearance, highly favourable for white candies, tablets and solid powders.
Strong endothermic effect during dissolution brings prominent cooling sensation, well-suited for oral-care products and solid instant beverages to enhance refreshing sensory experience.
Oral pathogenic bacteria such as Streptococcus mutans cannot metabolize mannitol to produce organic acids. It reduces dental-plaque formation and lowers enamel-erosion risk, providing auxiliary anti-caries effect.
Mannitol is a widely-used hexitol combining food-safety credentials with multiple physiological benefits:
Slow small-intestinal absorption imposes mild stimulation on blood glucose and insulin. It generates much lower post-prandial glycemic response than sucrose at equal dosage and provides a refreshing sweetening option for blood-glucose-management populations.
Incompletely absorbed in small intestine; most fraction reaches large intestine and triggers intestinal osmotic pressure effect. Relatively high dosage may easily cause bloating and diarrhoea, so formula dosage must be strictly controlled in production.
Oral microorganisms can hardly utilize it to produce acids, reducing tooth-erosion risk and suitable for oral-health-related food applications.
Partial replacement of sucrose reduces total product calories and supports dietary calorie management.
➢Dairy Products
Yoghurt & fermented milk: Partially replaces sucrose, maintains stable product colour, delivers gentle sweetening and reduces product calorie.
Milk-based beverages & plant-protein drinks: Refreshing non-cloying sweetness, stable system and anti-browning performance, suitable for low-sugar and sugar-free dairy formulations.
Ice-cream & frozen desserts: Modifies ice-crystal structure, enhances cooling mouthfeel and improves appearance stability of frozen products.
➢Baked Foods
Bread, cakes & toast: Low-hygroscopicity inhibits surface stickiness, preserves bright-white product colour and synergistically optimizes texture when compounded with other sugar alcohols.
Biscuits, shortbread & pastries: Reduces finished-product calorie, resists moisture-induced adhesion, with prominent advantages for light-coloured bakery goods.
Meal-replacement baked goods & energy bars: Stable compatibility with dietary fibre and whey protein, alleviates moisture-induced softening of finished products.
➢Beverages
